A lot of people wonder how I can be so passionate about nutrition.

I didn’t study nutrition in school.

And just like you, I grew up around people who were generally disinterested or unaware of the way food ingredients impact our minds & bodies.

I feel that everyone on this planet deserves to know this.

People can consume artificial sweeteners even though they are shown to be much worse than sugar.

They can consume GMO foods and feel good about it, even though future generations may laugh at how crazy they were for being so naive.

But I won’t choose to live in ignorance, and I know you feel the same.

That’s why I’m always trying my best (NOT trying to be perfect) to get educated and learn something new every single day.

When I learn something new, I feel compelled to share that discovery with the thousands of readers like you who read my daily newsletter.

Most days I send you articles that I spend hours researching.

But every few weeks I come across something that I actually think you need to purchase.

There’s free inforamation on the internet – which I’m really grateful for.  But there’s also so much junk that covers up the good stuff.  Plus the ‘articles’ that are really just advertisements… lame.

There are a LOT of choices you have when it comes to eggs.  You can bake them, boil them, fry than, sautee them with veggies, make dressings out of them, or color them during Easter!

1.  Our body NEEDS Omega-3 Fatty Acids to function, but it’s one of the only nutrients we can’t produce.  That’s why it’s critical to get Omega-3 fatty acids from things like fish… or eggs!  Omega-3’s are good for the heart, and may even help reverse certain diseases.  Egg yolks contain ample Omega-3 fats.

2.  Studies show that no increased risk of heart attack or stroke was shown with intake of 1-6 eggs per week, despite attacks on eggs in the last decade by the AHA (American Heart Association).   Studies now show that eggs are associated with levels of HDL, the ‘good’ cholesterol.

But as an adult, I gained weight around my middle that may be much in part due to the sugary little treats.

To celebrate, here are 3 delicious Easter Candy “Hacks” you and your family will love to make… and share!

1.  Healthier “Cadbury” Eggs

It’ll be pretty hard to get a round egg out of this recipe unless you have a super-sophisticated mold, but you can mold these caramel filled candies into any shape you want!

Ingredients

  • 1/2 Cup Honey
  • 1.5 Tbsp Almond Butter
  • 3 Tsp Unsalted Grassfed Butter
  • 1 Tsp Water
  • 1/2 Tsp Pure Vanilla Extract
  • 1 Cup Dairy-Free Chocolate Chips
  • ½ Tsp Coconut Oil

Directions

  1. Bring honey to a boil then lower heat to simmer for ten minutes.  Periodically stir the honey.
  2. Remove honey from heat and add almond butter, grassfed butter, vanilla, and water.
  3. Let honey & butter mixture cool for 10 minutes in the pan.  Now you have your caramel!
  4. Line tray with parchment paper and pour caramel on top.
  5. Wait 30 minutes, or until you can manipulate the caramel.
  6. Melt chocolate and coconut oil in a bowl. (Avoid the microwave by setting the bowl over boiling water to melt the chocolate.)
  7. Now pour your chocolate into molds – shape them like Easter bunnies if you can find the mold!
  8. Place balls of caramel in the molds on top of the first layer of chocolate
  9. Now fill the mold with more chocolate.
  10.  Enjoy after approximately 1 hour of refrigeration.

2.  Fat-Burning Fudge

I used to love walking around small antique-filled towns in Illinois where I grew up with my Grandma.  Her absolute favorite thing to get was fudge.  The more nuts, the better!

Here’s a recipe you can use that replaces the sugar with… a ripe banana!

Feel free to add nuts, Goji berries, or coconut to yours!

Ingredients

  • 2 Tbsp Peanut Butter
  • 2 Tbsp Coconut Butter
  • 2 Tbsp Cocoa Powder
  • ½ Very Ripe Banana
  • Sea Salt

Directions

  1. Use a blender or food processor to combine all ingredients.
  2. Now put your fudge in a mold, brownie tin, or even cupcake pan and place in freezer until it firms up to your desired consistency.

3.  Coconut “Mounds” Bar

In case you haven’t heard, coconut is one of the world’s most healthy foods.

And it’s even better when you can incorporate healthy foods into DESSERT!

Ingredients

  • 1 Cup Melted Coconut Oil
  • 2 Cups Shredded Unsweetened Coconut
  • 2 Tsp Vanilla Extract
  • 1 Tbsp Raw Honey
  • 1 Cup Chocolate Chips

Directions

  1. Mix coconut oil with coconut, vanilla, and honey.
  2. Line 8×8 dish with parchment paper and spread mixture evenly into dish.
  3. Melt chocolate chips in a bowl over simmering water and pour over the frozen coconut.
  4. Freeze until ready to cut into ‘bite sized’ mounds-like bars!

When I was a child, I ate every last bit of store-bought Easter Candy.

Is There Really Such A Thing As a “Fat Gene”?

I grew up thinking there was a nasty, evil bug implanted in certain ‘unlucky’ women that made them fat.

Women in my family told me that we had the ‘fat gene’.

As you can imagine, I felt doomed and it marred my childhood… and many of my early adult years.

I was filled with fear and hopelessness; and as a little girl I assumed that I, too, had the “fat gene”.

No matter how many sports I did or how healthily I ate; I would get fat and feel miserable, and there was nothing I could do about it.

I was dead wrong.

What was this ‘fat gene, and why did I fear it for so long?

There’s No Such Thing As A “Fat Gene”…

When my family told me that we had the fat gene, what they were referring to was the simple fact that they weren’t built like 6 foot tall members of the Swedish Bikini Team.

We’re all generally short, curvy, and we most certainly don’t have the luxury of eating whatever we want without gaining weight.

But in some cases, women in my family did discover that they did, in fact, have one specific disorder: hypothyroidism, or an underactive thyroid.

The thyroid is a real gland that has real effects on women, and occasionally on men, too.

Hypothyroidism does NOT mean you’re doomed to be fat.

…But it does mean that there are specific things you can do to keep your body in it’s best possible shape.

First, it’s education.

What is the thyroid?

The thyroid is a gland in your neck that produces a hormone which regulates body temperature, metabolism and heartbeat.

In the absence of sound knowledge, my family called it our ‘fat gene’ and used it as an excuse for why everybody seemed to be overweight.

What I found, however, was that scientists believe that in women over 35, chances of thyroid disorder are extremely high – even up to 30% or more!

And sadly, women suffer thyroid problems about 10 times as much as men.

Perhaps this is why people lied to me as a little girl and said that the women in my family had a ‘fat gene’.

What Happens When You Have A Thyroid Disorder…

If you have a sluggish thyroid, the little butterfly-shaped gene in the back of your neck doesn’t produce enough thyroid hormone.

If you have hyperthyroidism (vs. hypo), well as you can imagine, this means you produce too much thyroid hormone.

While thyroid imbalance is linked to genetics, it can also go haywire due to an autoimmune attack, pregnancy, stress, nutritional deficiencies, or even toxins in your environment.

A few things that happen to your body as a result of imbalanced thyroid are:

  • Fatigue…

Fatigue is most commonly found in hypothyroidism.

I used to wake up tired after 9 hours of sleep.  That’s when I knew I might have a thyroid problem…

  • Depression…

If you’re feeling particularly blue, you may have hypothyroidism.

That’s because hypothyroidism actually impacts your brain’s ‘happy’ chemical, Serotonin.

  • Anxiety…

Hyperthyroidism is likely to make you feel anxious.

Your whole body is flooded with too much thyroid hormone, which makes you feel ‘hyper’.  It also causes your metabolism to work out of control.

  • Increase or Decrease of Appetite…

Hyperthyroidism can cause you to feel hungry all the time, probably because your metabolism is revving as fast as a racecar.

Hypothyroidism, or an underactive thyroid, may alter with your sense of taste and smell.

  • Mental Fog…

When you’re suffering from a thyroid imbalance, you may feel a bit fuzzy in the brain.

That’s because too much thyroid hormone and make it hard to concentrate; you’re feeling hyper.

Hypothyroidism causes the opposite; lethargy, fatigue, forgetfulness, and fogginess.

  • Constipation

You’ve tried laxatives, herbs, hot water, prunes… but you’re bloated and constipated all the time.

This may be a symptom of hypothyroidism because your slow thyroid also slows down digestion.

  • High Blood Pressure…

My mother found out about her hypothyroidism when she learned her blood pressure was through the roof.

Hypo and hyperthyroidism can manifest high blood pressure.

In fact, those with hypothyroidism are three times more likely to develop hypertension!

  • Neck Pain…

Sore neck?  It may not be due to all that time you’re playing Angry Birds on your phone.

Rather, it may be thyroid swelling.

Look in a hand-mirror and drink a gulp of water.

If you see bulges or protrusions in the thyroid area, just below your Adam’s apple, it may be best to go see a doctor.

  • Weight Gain…

Weight gain can be caused from a plethora of things – some good, like putting on muscle, and some bad – like carrying excess water weight.

Weight gain, however, is one of the primary reasons people have their thyroids checked with a doctor.

If you notice that you’re gaining weight without any measurable change to your diet, you may have an underactive thyroid.

If you notice that you’re losing weight without big dietary changes, this may be an overactive thyroid.

  • Hair Loss…

One majorly scary symptom of hypothyroidism is a loss of hair.

Your slow system from an under-active thyroid actually puts your hair follicles in ‘resting’ mode, not growing new hair!

  • High Cholesterol…

Hypothyroidism can be linked to elevated levels of ‘bad’ cholesterol.

High levels of LDL cholesterol can beget heart problems, and even heart failure.

*Hypothyroid and hyperthyroidism are serious afflictions that you want to be sure to diagnose with your doctor and treat immediately.

What Can You Do If You Think You Have Hypo or Hyperthyroidism?

1.  Get Tested

If you believe that you are suffering from an underactive or overactive thyroid, please get tested with your doctor.

You may choose a holistic doctor or a traditional doctor to have your hormone levels tested.

2.  Respect Your Natural Energy Levels

In order to really pick up on what your body is throwing down, try to cut caffeine and sugar from your diet.

Instead of a caffeinated beverage, drink Slimming Tea.

Genetics are a very funny thing.

Most people believe that they control your destiny.

In reality, they are controlled by your environment. But guess who controls your environment?

Do You Have "Human Barbie" Syndrome?

Yesterday I was bombarded with questions about what I think about the “Human Barbie”, a woman named Valeria Lukyanova who has pulled, pressed, cut, and reshaped her body to look like… well… a Human Barbie.

While Lukyanova states, “Look, to me the Barbie Doll looks perfect; it was created as a human idol…’, others think she looks like an alien.

You see – the whole Valeria Lukyanova thing ignited both a visceral reaction in me as well as one of respect.

On one hand – it’s toxic to think that there’s only one truly perfect human appearance.

On the other hand, I believe in freedom; even if that freedom makes you look like an alien.

Is there a part of me that wants to scream if I one more store full of ‘skinny jeans’ and ‘bodycon’ dresses?

Well, frankly yes.  I am 5’1″; I’m curvy; I’m muscular; and I’ll never really look just right in either of these hot clothing trends.

I tried to do the “Barbie” thing for years and it left me just, plain miserable.

What Is Human Barbie Syndrome?

Every year thousands of people die due to eating disorders.

But the truth is, many others live with eating disorders; they’re just dying inside.

You don’t have to be an anorexic or bulimic.  You may be dying inside because you can never relax around food.

Or maybe you constantly have an image of what you ‘should’ look like… and no matter how healthy you are, you can’t stay happy in your own skin.

We’re all inundated with Photoshopped magazine covers daily.  So how do we find a measure of beauty that satisfies us?

I’m 5’1″; I’ll never look like a Barbie.  Or even a Disney Princess.  I’m just me.

But for years I had Human Barbie Syndrome.  (I don’t know if it’s a real term so I hope I’m not stepping on any toes, here.)

I spent time thinking about nothing but my thighs.  Or how tiny my tummy looked.  Or how much I could make my cheekbones protrude.

Human Barbie Syndrome is trying to measure yourself up to a standard of perfection that isn’t natural- or even possible; and making yourself miserable when you don’t reach that standard.

How Human Barbie Syndrome Destroys Lives…

Let me tell you: my Human Barbie Syndrome was miserable.

I’d snap at cashiers, waiters, my family, my professors, my friends…

Looking back at pictures – I see a stunning, stunning young woman.

But I had Human Barbie Syndrome.

I constantly compared myself to models.  Or my thinner friends.  Or friends who were the same size as me but wore it better.

I didn’t want to leave the house and I didn’t want to stay at home near a refrigerator either.

Food fears imprisoned me.

And worse yet, I burned more bridges because of my social anxiety and appearance woes than I could ever hope to rebuild.

How To Heal From Human Barbie Syndrome

If I just ended this blog post with telling you to “focus on the good things”, it would sound completely prosaic, even trite.

This is how I snap myself OUT of Human Barbie Syndrome and into self-appreciation.

1.  Distract Yourself…

Mark Twain said that “comparison is the death of joy”; but nonetheless we constantly compare ourselves to others even though it makes us miserable… and it does nothing to change our appearance, or our hearts!  (If nothing else – it makes you look ugly!)

Focus on what IS beautiful about you.  Your nose isn’t flawed – it’s got personality.  YOUR personality.  Your rear end isn’t fat.  It’s voluptuous.

Maybe it’s your silky hair. Your cellulite-free thighs.  Your endurance.  Your complexion.

When I meet a tall, skinny, waif-like woman I don’t feel envy.

I tell myself that I’m grateful I am not too tall because that comes with it’s own slew of problems that I don’t need.  Like towering over average-sized men I’ve dated.  Or finding long pants.

Start to measure your self-appreciation not in dress sizes, but in overall health.

2. Bring Balance To Your Brain…

When in a group listening to people praise the ‘skinny’ girls, or when spending time with men who have skewed views of what women “should” look like, I immediately shut the door to my mind and heart.

For every Barbie Doll who walks past my gawking male friends – I balance that with a compliment to myself.

“Stephanie, you’re smart.  Perhaps even smarter than her!”

“Stephanie, you’re a rockin’ wife.  Your husband must love that you chill with his guy friends effortlessly.”

Get into the practice of changing every negative thought that could enter your head with a dose of self-love.

Now instead of comparisons, you’re flooding your mind with self-love.

3.  Pay It Forward…

Give others what you most desire yourself.

If you want your personality, your smile, or your work ethic validated, seek to appreciate another.

What goes around does come around – and your attitude of appreciation will only make you shine brighter as a person.

And that’s beautiful!

4.  Keep Happiness In Your Pocket…

One of the best ways to feel overcome Barbie Syndrome is to take your focus away of an ideal person or body and focus on your OWN body in a positive way.

One of the most powerful ways to do this is to have a go-to happiness trigger with you at all times.
