Course 1 Food Prep:

Wu-Long Slimming Soup Stock

Makes enough for approximately 16 servings of soup

Ingredients:

  • 1 lb. Free-Range Chicken Legs & Thighs
  • Black Peppercorn
  • 1 Liter Metabolism-Boosting Wu-Long Tea
  • 1 Tbsp. Apple Cider Vinegar
  • 1 Onion
  • 4 Stalks Celery, chopped
  • 3 Carrots, chopped
  • 1 Bulb Garlic

Directions:

  1. Sauté one white onion in a pan until onions are translucent.
  2. Add garlic cloves to taste.  I will use a whole bulb, personally!
  3. Once the onions & garlic are lightly browned, add chopped carrots and celery, apple cider vinegar and 1 lb. chicken thighs and legs.  The vinegar is used to break up the bones and release their nutrients and marrow into the broth.  The vinegar is a critical part of the soup! 
  4. Add 1 liter Wu-Long tea (steeped for 4 minutes) and 3 liters filtered water.
  5. Spices:  I don’t generally add spices because I sometimes make mild soups like Avgolemono, and other times I want to make a soup loaded with unique spices that I don’t want in my ‘stock’ soup.  I do add cracked black peppercorns, no matter what I do with the soup – I always love a little kick!
  6. Cook soup broth on medium-high for 3 hours, covered.  Your house will smell amazing in no time!
  7. After a few hours, or once you’ve reached desired depth of flavor, skim excess fat from the top of your soup and strain the broth.  Discard the celery, bones, garlic, onion, carrots, and peppercorn.  Now you have a delicious stock to use in soups, or to drink on it’s own for it’s nutritional benefits.

 **Important:  I always store the broth in a glass container because of the toxic effects of BPA in many plastic containers.

Course One:

Dairy-Free Creamy Broccoli Soup

Serves 4

Broccoli soup

Ingredients:

  • 1 Liter Wu-Long Slimming Tea Broth (recipe above)
  • 2 lbs. Broccoli, chopped with stems separated from florets
  • 1 Lg. Onion, chopped
  • 1.5 Lbs Potatoes (peeled & chopped in 2-inch cubes)
  • ¾ Cup Unsweetened Almond Milk
  • ½ Lemon
  • 2 Bay Leaves
  • Salt & Pepper

Directions:

Bring Wu-Long Slimming Tea Broth to a boil with Broccoli Stems, Onion, Potatoes, Bay Leaves, and ½ juice of Lemon (save the yellow zest for a garnish!) and let simmer for 15 minutes.

Once veggies are tender, bring to medium-high heat and boil.  Add broccoli florets and reduce heat in approximately 7 minutes, or when florets are tender.

Place soup on cool side of stovetop and discard bay leaves.  After letting it sit for two minutes, use immersion blender to puree the soup with ½ cup Almond Milk.

Once pureed, bring soup again to a boil and add more almond milk to achieve desired consistency.  You may reduce the soup over low heat without boiling for a thicker soup, or add more milk for a thinner soup.

Salt and pepper to taste.  Then garnish with toasted pine nuts, small broccoli florets, lemon zest, or any other desired garnish or herb.

4 Ways Your Toothpaste May Be Toxic…

I kinda bought into the anti-fluoride thing a few years ago when some of my “health-conscious” friends convinced me that it was basically poisonous.

But like many healthy habits… I didn’t have time to dig into this one; so I took it at face value.

…Until now.

I remember my childhood dentist sticking that horrific gooey sour-grape-flavored mold over my teeth as a kid and how I hated the “Fluoride Treatment”.

What Is Fluoride?

1.  Fluoride Damages Organs, Tissues, and Teeth…

According to the Department of Environmental, long-term exposure to excessive amounts of fluoride is known to be toxic to human beings.

It can cause extensive damage to organs and tissues inside the human body.

In fact, a study published in the journal Food Research International holds that millions of people are at risk tooth decay, bone loss, and other diseases due to fluoride.

The most obvious sign of excessive fluoride in somebody’s diet is the decaying of their teeth, known as dental fluorosis.

Dental fluorosis is basically the erosion of tooth enamel.

According to FAN, it has increased 400% in the past 60 years.

And the CDC considers approximately 41% of the US population victim to fluorosis.

While cosmetic surgery may be used to ‘cover up’ the erosion of tooth enamel; it’s expensive…

… And you may not know you are suffering from fluorosis until you’ve suffered considerable damage to your teeth!

2.  Fluoride Wreaks Havoc on Hormones…

Scientists also conducted a study to measure the impact that fluoride has on male reproduction.

When rats were used to test this theory; the rodents even showed signs of physical abnormalities.

One such case study claims that abnormalities are mainly due to “disturbance of spermatogenesis and germ cell loss in addition to oxidative stress. “

In 2006, the National Research Council stated that fluoride disrupts normal endocrine function.

Your endocrine system is the system your body uses to secrete hormones into your body.

Among other things, your endocrine system is responsible for:

  • Adrenal glands; which release the hormone cortisol into your body
  • Hypothalamus: which tells the pituitary gland to release hormones
  • Ovaries
  • Pituitary gland: the “master gland” which influences, among other glands, your thyroid
  • Testes
  • Thyroid: which controls metabolism

I don’t know about you, but with the prevalence of miscarriages, low-testosterone, erectile dysfunction, ovarian cancer… and a plethora of other diseases that are already plaguing human reproductive health; I’m not taking any chances! 

3.  Fluoride May Kill Brain Activity…

Fluoride is well-known to cause neurotoxicity in adults.

Studies in rodents have also linked it to memory and learning problems.

The Harvard School of Public Health in conjunction with China Medical University revealed 27 case studies that studied the impact on children who consume fluoride on a regular basis.

All but one of the studies concluded that fluoride has an obvious impact on cognitive development in children and causes an “IQ deficit”.

Other studies have found that kids who live in highly-fluoridated areas are much more likely to have lower IQ scores than kids who live in lower fluoridated areas.

4.  Fluoride is Linked To Tumors…

Studies by the National Toxicology Program, which is part of the National Institute of Environmental Health sciences, conclude that fluoridated water may lead to osteosarcomas – or bone tumors.

These studies weren’t over a lifetime or even decades.

Rather, the tumors occurred in rodents after a mere two years of exposure to fluoride in water.

Another case study revealed that males show higher susceptibility to bone tumors caused by fluoride.

How Can You Avoid Fluoride?

Fluoride is found in store-bought drinks and juices, red and white wine, toothpaste, tap water, your shower…

It’s no light task to take fluoride out of your life.

Here are a few tricks I’ve used to help me eradicate fluoride from my own life.

  • Change Your Toothpaste

Try using non-fluoride toothpaste.

You can find them on Amazon or at your local conscious, organic dentist’s office.

My personal favorite is “Oxyfresh”, but at the office I have PerioBrite and Tom’s.

This is one of the EASIEST things you can do to avoid consuming fluoride.

  • Don’t Buy Store-Bought Drinks 

Store-bought juices, bottled water, and ‘prepackaged drinks’ are not usually made with filtered non-fluoridated water.

This is a huge life-change so you may need to start really small.

Step one for me was kicking a soda-pop addiction I acquired from after college.

Then removing store-bought bottled waters and flavored beverages became the objective.

Now I don’t care how green it is: I avoid ALL drinks in bottles at ALL costs.

  • Filter Your Tap Water

It seems ironic when my friends ask me if my tap water is “safe to drink”.

I don’t care what country I’m in; I always avoid tap water and prefer to travel with my own filtering water bottle.

My favorite water filters all come from Berkey, but there are a ton of other .

I have the small ones for travel; the huge one for my kitchen, and a convenient coffee pot sized one for the office 😉

At home I use filtered water for my coffee, tea, soda water that I make at home, drinking water, and even to brush my teeth!

  • AVOID Grocery-Store Teas

Did you know that I also avoid store-bought TEAS?!

That’s right.  Many cheap, grocery-store teas have toxic levels of fluoride.

In fact… grocery-store teas often have fluoride levels that EXCEED the already-high government standards for fluoride!

This is a big step in motivating other pharmacies or grocery store chains to eliminate tobacco sales.

But if you think about it… why does a pharmacy –the very place where people go to find medicine toheal from their sicknesses- sell the very thing that makes people sick?!

Kudos to CVS for staying the course – as their stock value dropped a bit last week in an apparent reaction to this news.

But don’t get too choked up about the news…CVS isn’t quite totally in the health business.

While they’re going to lose some money from lost tobacco sales eventually… they’re offering smoking cessation programs in tobacco’s stead.

Grassroots movement tries to ban yoga mats and shoe leather from Subway sandwiches…

I couldn’t be more supportive of small, grassroots efforts by writers, researchers, and bloggers to abolish toxic food additives and ingredients regularly consumed by the public.

And every once in a while, I have to share something with you that you may not otherwise see or read unless you’re really tuned into the grassroots movement.

Earlier this week, witnessing the powerful effort by the informational ‘food babe’ website really put a smile on my face.

On February 4th, 2014, the website launched this petition for Subway to abolish a nasty chemical called azodicarbonamide found in Subway sandwiches.  (Let’s call it “AZO” in this article.)

AZO is a plastic chemical that was found in Subway sandwiches’ bread.

You can also find it on the bottom of your shoe… literally.

It’s used in yoga mats and synthetic materials like shoe rubber.  YUCK!

But the signatures aren’t worth a thing if Subway sandwiches doesn’t get rid of the toxic ingredients found in it’s bread.

Okuma family – please let’s get behind this petition.

How Dangerous IS Azodicarbonamide?

Millions of people all over the world – many children- are exposed to the chemicals Subway uses.

And it’s pretty well-accepted in the scientific community that these carcinogenic chemicals are linked to asthma and allergies – which are epidemic in children today.

Here’s what’s WORSE…

  • A truck carrying AZO flipped over on a Chicago highway in 2001 and people were evacuated for a half mile radius around the accident!!  Many people experienced burning eyes and skin irritation from the spilled chemical.

I’ve been a talk radio fiend and health writer for years now – and the potential danger of chemicals and radiation in sushi is NO news.

Why We’re Scared of Toxic Pacific Fish…

While there’s always been concerns over consuming fish from our polluted oceans, the problem has been magnified following the category 9 tsunami that hit Japan’s coast a few years ago.

In March of 2011, an earthquake in Japan caused a tsunami to hit it’s coast.

This resulted in the meltdown of three nuclear reactors at the Fukushima Daiichi power plant

It also amounted to the worst nuclear catastrophe since Chernobyl.

In order to cool the reactors at Fukushima off, water was poured onto them.

That water eventually seeped back into the ground nearby… and thereby into the Pacific Ocean.

Understandably, people are now feeling a little sheepish about their sashimi…

Overreactions To The Fukushima Pollution…

Radioactive isotopes found in bluefin tuna as well as several other Pacific fish are a serious deal.

In fact, a good friend of mine just literally purchased a Geiger counter to use in our favorite restaurants.

It’s been three whole years since Fukushima’s nuclear meltdown- and it’s probably about that time where we’d see three-headed halibut making it’s way into our fishing nets.

Physicians and health experts are conducting tests to see how radioactive  fish just may be.

But many of these initial tests aren’t showing anything worth the above-mentioned headlines.

Many believe that the death of sea lions that was so popular in the news was actually due to malnutrition.

And the fish with the bleeding gills that you may have read about?

This appears to be caused from a virus the causes hemorrhaging in seabirds.

The Truth About Fukushima Radiation in Pacific Fish…

While water tested at the Fukushima nuclear plant showed almost five times MORE radiation than was originally reported…

There doesn’t appear to have been an equally detrimental effect on wildlife in the area.

There are three radioactive isotopes that are most commonly found in organisms affected by Fukushima.

Strontium-90, Cesium-137 and Cesium-134.

Cesium-137 is considered the deadliest byproduct of nuclear fission from either a power plant or a bomb.

These radioactive isotopes are linked to bone cancer, cancer of nearby tissues, and even leukemia.

Strontium-90 has been found in some tests conducted on Pacific Fish that migrate to the coast of Canada, as well as radioactive Cesium.

But while the highest level of Cesium that is approved for consumption is a level of “100”, the highest level of Cesium that has been shown is actually not in fish – but in the seaweed we use to wrap fish, melt into soups, or crunch as a salty, fishy snack.

That’s right: seaweed has been shown to have elevated Cesium-137 levels in 100% of all samples tested… but not yet enough to stop consuming.

Other fish that have been tested with exceedingly high levels of radiation include anchovies, halibut, mackerel, sardines, cod, shark and monk fish.

What Can We Do To Enjoy Sushi Without Getting Sick?

While government food agencies are supposedly monitoring fish that could be affected by Fukushima pollution and making sure that the public does NOT consume radioactive Pacific fish; many are saying that the industry is too big and the agencies too lax.

Therefore many people have sworn off sushi altogether.

That’s totally okay… my husband is a cancer survivor and I totally agree that it’s better safe than sorry.

However, here’s are a few really fascinating counter-points to consider…

Many writers and researchers who’ve shed light on the Fukushima fallout have noted that you would get 20 TIMES more radiation from eating one banana than from ‘toxic tuna’.

That’s right – bananas have a naturally occurring potassium isotope.

But you don’t hear people talking about radioactive bananas.

Other foods with radioactive elements include potatoes, kidney beans, sunflower seeds, or even Brazil nuts – which have 100 TIMES the radioactivity of “toxic” Pacific Bluefin Tuna.

You’re definitely more likely to obtain radiation from unsuspecting foods like the above, a dental x-ray, or even going through the airport scanners.

What You Really Should Be Worried About In Fish…

It’s pretty easy for journalists, talk radio hosts, new outlets, and bloggers to blow Fukushima Fallout fears… well… ‘out of the water’.

But no matter how you choose to read this article; there IS one nasty toxin we should be worried about in our fish.

It’s mercury.

You know – the red stuff in thermometers that your grandpa probably used to play with like it was silly putty?

It’s caused by power plants and other factories which pepper coastlines worldwide.

The Biodiversity Research Institude says about mercury-laden fish that, “smaller traces of the toxic metal may be enough to cause restricted brain development or other health problems for humans who eat them.”

The National Wildlife Foundation even states that mercury can “adversely alter the neurological and reproductive systems of humans and wildlife.”

About 70 percent of fish contains low levels of mercury; such as cod, salmon, herring and sardines.

At present, fish with the highest mercury content are these:

HIGH MERCURY FISH:

  • Bluefish
  • Grouper
  • Mackerel (Spanish, Gulf)
  • Sea Bass (Chilean)*
  • Tuna (Canned Albacore)
  • Tuna (Yellowfin)*

REALLY HIGH MERCURY FISH:

  • Mackerel (king)
  • Marlin
  • Orange Roughy
  • Shark
  • Swordfish
  • Tilefish
  • Tuna (Bigeye, Ahi)

I’ll keep researching and reading.

But for the time being – I’m much more worried about mercury in fish than radiation.

Which is good, because there’s nothing I love more than a seaweed-wrapped cucumber roll with Wu-Long Tea.
